No-Bake Gluten-Free Protein Bars

Creator, we offer you gratitude for all the sources involved in the preparation of this food today. From the sweet Earth that brought these gifts of food to all the hands that played a role in bringing these ingredients into my hands today.

Sometimes you just need a healthy snack on the run. Am I right?

INGREDIENTS

2.5 cup gluten-free rolled oats (I use Bob’s Red Mill)
1 scoop plant-based protein powder (I use a pea protein)
10 pitted, soft, organic Medjool dates
1 cup chopped almonds (optional)
1 t vanilla extract
¼ t salt
¼ milk (I use almond milk)
3 oz unsweetened chocolate, chopped and melted (optional)
8 oz bittersweet chocolate, chopped and melted (optional)

INSTRUCTIONS

Line an 8 or 9-inch square baking pan with parchment paper (unbleached)

Using a food processor, put the oats in and grind until it looks like flour.
