I don’t know about you, but I’m a fan of chicken soup any time of the year. I don’t really need a reason to make soup, but chicken soup does happen to be a top favorite. That, and Korean Mandu Gook, except I’m gluten-free so I must make that at home now and it’s time-consuming.

Chicken soup — easy peasy!

Before I get started with the recipe, assume that all ingredients are organic. I am a firm believer that the pesticides that get sprayed on your vegetables and food that gets fed to chickens, cows, lambs, and other animals cause a whole host of health issues.

I am living proof that purchasing only grass-fed, organic meats and produce is one of the reasons I went from being full-blown hypothyroid to almost healed. Yes, being gluten-free helps that, but that’s because I’m intolerant.

Even when my income has been much less, I haven’t skimped on shopping sustainably and organic because it’s preventative medicine. You just have to shop smarter.
