Modern day Koreans eat meat because South Korea is booming financially and most people can afford to eat meat, but you can still get vegetarian dishes. Even the soups, like Mandu, can sometimes be made vegetarian.
I have been vegetarian in the past and do fine at Korean restaurants. Here's the trick with going to a Korean restaurant. Each restaurant specializes in something. Don't go to the BBQ places. Go to the other places that offer tofu soups (yum) and cold soups (in the summer).
