As someone who has struggled with stomach issues most of her life, I am always keeping things around (like ginger candies) when I have an upset stomach. But, a few years ago, when I was having extreme stomach pain, I visited my Korean acupuncturist, who introduced me to jook (Korean rice porridge). In fact, he took me to a Jook restaurant in Koreatown Los Angeles to show me the many, many varieties.

We often think of rice, especially Asians, as that grain that you put stuff on top of. It becomes an accent to the meal, not the highlight. Nonetheless, rice is a mainstay and soul to many people around the world.

The popularity of rice comes from the fact that it pairs well with so many things and is very affordable. But, as many of you know, rice isn’t necessarily the healthiest food item, having been linked to a rise in diabetes. The beauty of jook is that the way it is cooked makes it a healthier option.

Rice porridge is only one way of making jook. In Korea, there are many Jook restaurants that also serve a wide variety, from vegetable, red beans, pumpkin, ginseng to abalone jook. And, that’s the shortlist. Currently, in upscale Korean restaurants, jook is served in place of soup when…
